  • 2 cups chopped rotisserie chicken
  • 2 1/2 cups chicken broth
  • 2 apples, peeled and roughly chopped
  • 1 white onion, peeled and roughly diced
  • 3/4 cup half & half
  • 4 tbsp butter
  • 2 cups shredded Mexican blend cheese
  • 2 tbsp olive oil
  • 2 tbsp chili powder
  • 2 tsp ground cumin
  • 1/4 cup flour
  • 2 15 oz cans cannellini beans, drained
  • Salt & pepper to taste

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat. Add chopped apples and onions; cook for 6-8 minutes until soft. Stir in chili powder and cumin.
  2. Lower heat to medium-low. Melt butter in the same pot; whisk in flour for about 1 minute to create a roux.
  3. Gradually add chicken broth while whisking continuously; then whisk in half & half until thickened (about 3-5 minutes).
  4. Stir in cooked chicken, drained beans, and apple-onion mixture until combined.
  5. Adjust consistency with extra broth if needed, then stir in shredded cheese until melted.
  6. Serve hot with your favorite toppings.
