  • 1 can (14.5 oz) diced tomatoes
  • 2 tablespoons tomato paste
  • 1 can (15 oz) pumpkin puree
  • 1 can (13.5 oz) unsweetened coconut milk
  • Juice from one small lemon
  • 1 tablespoon brown sugar
  • 2 tablespoons curry powder
  • 2 teaspoons mild chili powder
  • Salt and pepper to taste

Instructions

  1. Dice the chicken into bite-sized pieces and season with olive oil, salt, and pepper.
