  • 1 pound ground beef
  • 2 tablespoons taco seasoning
  • 2 ripe avocados
  • 1 lime, juiced
  • 1 cup diced tomato
  • 1/2 cup diced red onion
  • 1/4 cup chopped cilantro
  • 1/2 cup sour cream

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cube and toss sweet potatoes with olive oil, paprika, cumin, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes.
  3. In a skillet over medium heat, cook ground beef until browned. Drain excess fat and add taco seasoning with a splash of water; simmer for 3-5 minutes.
