  • 1/8 tsp fresh nutmeg

  • 3 1/2 cups low sodium vegetable broth
  • Pinch of kosher salt
  • Fresh pepper (optional)
  • Maple syrup (optional)

Instructions

  1. Heat olive oil in a medium-sized soup pan over medium heat until shimmering.
  2. Add chopped shallots and sauté until translucent, about 3–4 minutes.
  3. Stir in cubed sweet potatoes and apple chunks with a pinch of salt; sauté for an additional 3 minutes.
  4. Pour in vegetable broth to cover the vegetables; bring to a gentle simmer and cook until tender, approximately 15–20 minutes.
  5. Blend the soup until smooth using an immersion blender or regular blender, adjusting consistency with more broth if needed.
  6. Stir in nutmeg and cinnamon; season to taste with salt and pepper.
