  • 1.5 lbs top sirloin steak
  • 1 cup potato starch
  • oil for frying
  • 1 small onion
  • 2 cloves garlic
  • 45 slices ginger
  • 3/4 cup honey
  • 1/4 cup + 2 tablespoons light soy sauce
  • 1/2 cup water
  • 1 tablespoon hoisin sauce
  • 1/2 tablespoon rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon shaoxing cooking apple vinegar
  • 5 teaspoons corn starch
  • 6 teaspoons water
  • 12 stalks green onion (chopped)
  • toasted sesame seeds

Instructions

  1. Slice the beef into thin strips against the grain and coat each piece in potato starch.
  2. Heat oil in a deep frying pan or wok until it reaches about 350°F (175°C).
  3. Fry the beef strips in batches until golden brown and crispy, approximately 3-5 minutes per batch.
  4. In another pan, sauté onions, garlic, and ginger until fragrant. Add honey, soy sauces, water, hoisin sauce, rice vinegar, sesame oil, and shaoxing vinegar; simmer for about 5 minutes.
  5. Mix cornstarch with water to thicken the sauce; add this mixture to the simmering sauce while stirring continuously.
  6. Toss the crispy beef in the thickened sauce until well-coated.
  7. Garnish with green onions and sesame seeds before serving.
