Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, and salt. Set aside.
  3. In a large bowl, cream together softened butter, granulated sugar, and powdered sugar until light and fluffy.
  4. Add eggs one at a time along with vanilla extract (and almond extract if using). Mix until well combined.
  5. Gradually incorporate the dry ingredients into the wet mixture until just combined.
  6. Scoop about 1 tablespoon of dough, form it into a disc, create a well in half of them, fill with jam, and top with another disc. Seal edges by crimping with a fork.
  7. Bake for 10–12 minutes or until edges are lightly golden brown.
