  • 2 medium sweet potatoes
  • 1½ tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • ½ teaspoon chili powder
  • ½ teaspoon cumin
  • 1 pound lean ground beef
  • 1½ teaspoons salt
  • 2 teaspoons garlic powder
  • 2 teaspoons smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon black pepper
  • 1 cup cottage cheese
  • 2 avocados, sliced
  • ¼ cup hot honey
  • Chili flakes
  • Sliced green onions

Instructions

  1. Preheat oven to 400°F (200°C). Toss cubed sweet potatoes with olive oil, salt, black pepper, garlic powder, chili powder, and cumin in a mixing bowl. Spread evenly on a roasting pan and bake for 25 minutes until golden and tender.
  2. While sweet potatoes roast, heat a skillet over medium-high heat. Add ground beef along with salt, garlic powder, smoked paprika, cumin, chili powder, and black pepper. Cook for 8–10 minutes until browned.
  3. Assemble your bowl with roasted sweet potatoes as the base topped with the seasoned beef. Add cottage cheese dollops, avocado slices, hot honey drizzle, chili flakes, and green onions.
