  • 1 jalapeño pepper, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon cumin (ground)
  • 1 teaspoon cayenne pepper
  • 1 teaspoon turmeric
  • 1 teaspoon coriander (ground)
  • ½ teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon pepper (or to taste)
  • 3 tbsp olive oil (or coconut oil)
  • 1 tablespoon fresh ginger (chopped)
  • 3 medium tomatoes (chopped small)
  • 2 tablespoons lemon juice (freshly squeezed)
  • Fresh parsley or cilantro for garnish

Instructions

  1. In a large bowl, mix spices (cumin to pepper) to create the spice blend.
  2. Coat chicken with the spice mixture thoroughly.
  3. Heat oil in a skillet over medium heat; cook chicken until browned (6-8 minutes per side). Remove and cover.
  4. In the same skillet, sauté onion, jalapeño, ginger, and garlic until softened (about 5 minutes).
  5. Add tomatoes and lemon juice; season and cook until tomatoes soften (another 5 minutes).
  6. Stir in coconut milk and let simmer until thickened (about 5 minutes).
  7. Return chicken to skillet; simmer with sauce for an additional 5 minutes.
  8. Garnish with fresh herbs before serving hot over rice or preferred side.
