  • 3 tablespoons butter (divided)
  • 2 small zucchini (cut into thin, half moon slices)
  • Salt and black pepper (to taste)
  • 1 small yellow onion (finely diced)
  • 1 pound small button mushrooms (cleaned and patted dry)
  • 3 to 4 cloves garlic (minced)

  • ¼ cup vegetable broth

Instructions

  1. Heat olive oil and half a tablespoon of butter in a large skillet over medium-high heat.
  2. Add zucchini slices; season with salt and pepper. Cook for 3 to 4 minutes until fork-tender, then set aside.
  3. In the same skillet, melt remaining butter over medium-high heat; sauté onions for about 2 minutes.
  4. Add mushrooms; cook for 5 to 7 minutes until tender and browned.

  6. Return zucchini to the skillet; combine with mushrooms and heat through for another minute.
