  • 1 pound large shrimp (peeled and deveined)
  • ½ cup plain Greek yogurt
  • 2 tablespoons fresh lime juice
  • 8 small corn or flour tortillas
  • ½ small cabbage (shredded)
  • 1 avocado (sliced)
  • ¼ cup Cotija cheese (crumbled)
  • Fresh cilantro (for garnish)

Instructions

  1. Make the taco sauce by whisking together Greek yogurt, lime juice, sriracha, garlic powder, smoked paprika, and salt in a bowl. Thin with water if necessary.
  2. Season the shrimp with smoked paprika, garlic powder, oregano, onion powder, salt, and pepper.
  3. Heat olive oil in a nonstick skillet over medium heat and cook the shrimp for about 2 minutes per side until pink.
  4. Warm tortillas in a dry skillet or microwave.
  5. Assemble each taco with shredded cabbage, avocado slices, cooked shrimp, sauce drizzle, chopped cilantro, and Cotija cheese.
