  • ¾ cup sour cream
  • 1 lb ground beef (85% lean)
  • 1 yellow onion, diced
  • 3 cloves garlic, minced
  • 3 tablespoons salted butter
  • ¼ cup flour
  • 4 cups chicken broth
  • 2 cups half-and-half
  • 2 teaspoons Italian seasoning
  • 2 cups shredded cheddar cheese
  • 1½ cups mixed frozen vegetables

Instructions

  1. Boil water in a large pot. Peel and cube russet potatoes; cook until tender (about 15 minutes). Drain and mash with sour cream, salt, and butter.
  2. In another pot over medium heat, brown the ground beef. Drain excess fat.
  3. Add diced onions and minced garlic to the beef; sauté until onions are translucent.
  4. Stir in flour, then gradually add chicken broth while stirring constantly. Mix in half-and-half, Italian seasoning, salt, pepper, and mixed vegetables.
  5. Simmer for about 10 minutes before stirring in shredded cheddar cheese until melted.
  6. Serve hot soup topped with creamy mashed potatoes.
