  • 4 large egg yolks, lightly beaten
  • 2 1/2 cups heavy whipping cream
  • 2/3 cup packed light brown sugar
  • 1/3 cup cornstarch, sifted
  • 1/2 tsp salt
  • 1/2 cup honey
  • 2 tsp vanilla extract
  • Flaky sea salt for sprinkling

Instructions

  1. Prepare the pie crust in an 8-inch or 9-inch pie pan and chill it in the refrigerator.
  2. In a medium saucepan, combine heavy cream, brown sugar, cornstarch, and salt over medium heat. Stir continuously until boiling.
  3. Remove from heat and temper the egg yolks by gradually adding hot cream mixture while whisking.
  4. Pour the egg mixture back into the saucepan, add honey and vanilla extract, stirring until smooth.
  5. Pour the custard into the chilled pie crust and bake at 375°F (190°C) for 40-45 minutes until slightly jiggly.
  6. Cool to room temperature before refrigerating until completely chilled.
  7. Prior to serving, sprinkle with flaky sea salt.
