  • 1/4 cup + 1 tablespoon milk (room temperature)
  • 1/4 cup unsalted butter (melted and cooled)
  • 2 teaspoons pure vanilla extract
  • 1/2 cup granulated sugar (for topping)
  • 1/2 cup brown sugar (for topping)
  • 1/4 teaspoon ground cinnamon (for topping)
  • 1/3 cup pecans (chopped)
  • 1 1/2 cups hot water

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease a 2-quart casserole dish.
  2. In a mixing bowl, sift together the all-purpose flour, whole wheat pastry flour, baking powder, kosher salt, granulated sugar, and spices.
  3. In another bowl, mix pumpkin puree, milk, cooled melted butter, and vanilla until well combined.
  4. Gradually combine the wet and dry mixtures until just integrated; do not overmix.
  5. Pour the batter into the greased dish.
  6. In a separate bowl, mix together sugars and cinnamon; stir in chopped pecans and sprinkle over the batter.
  7. Carefully pour hot water over the topping without stirring.
  8. Bake for 40 minutes or until the center is set.
