  • 110 g butter
  • 120 g pumpkin purée
  • 240 g all-purpose flour
  • 2 large eggs
  • Granulated sugar
  • Dark brown sugar
  • Ground cinnamon
  • Ground allspice
  • Ground nutmeg
  • Ground ginger
  • Baking powder
  • Baking soda
  • Salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine cream cheese, granulated sugar, and vanilla extract until smooth; set aside.
  3. In another bowl, beat butter with granulated and dark brown sugar until creamy. Add pumpkin purée, eggs, and vanilla; mix well.
  4. Whisk together flour, spices, baking powder, baking soda, and salt in a separate bowl. Gradually mix into the wet ingredients until just combined.
  5. Drop spoonfuls of dough onto a prepared baking sheet lined with parchment paper. Create an indentation in each cookie and fill with cheesecake mixture.
  6. Roll each cookie ball in a mixture of sugar and spices before baking for about 12 minutes until edges are golden but centers remain soft.
