  • 4 skinless salmon fillets
  • 1 cup dry orzo pasta
  • 3 cups low sodium chicken broth
  • 5 ounces baby spinach
  • Juice from ½ lemon
  • ½ cup grated Parmesan cheese
  • 1 tsp salt (divided)
  • 1 tsp coarsely ground black pepper (divided)
  • 1 tsp sweet paprika
  • 1 tsp garlic powder
  • 1 tbsp olive oil
  • 1 tsp unsalted butter
  • 1 yellow onion (finely chopped)
  • 3 garlic cloves (minced)
  • 1 tsp dried thyme

Instructions

  1. Season the salmon fillets with garlic powder, sweet paprika, salt, and pepper.
  2. In a large nonstick skillet, heat olive oil and butter over medium-high heat. Sear the salmon for 3-4 minutes on each side until golden brown. Remove and set aside.
  3. In the same skillet, reduce heat to medium and sauté chopped onion and minced garlic until soft. Add thyme and remaining salt and pepper.
  4. Toast the orzo in the skillet for about 1 minute before adding chicken broth. Bring to a boil, then reduce heat to simmer uncovered for about 8 minutes until most liquid is absorbed.
  5. Stir in spinach until wilted, then mix in lemon juice and Parmesan cheese.
  6. Return salmon to the skillet, simmer for an additional 2-3 minutes until heated through.
