  • 2 cups cooked grains (brown rice, quinoa, or cauliflower rice)
  • 1 cup cherry tomatoes
  • 1 cucumber
  • ½ red onion
  • ¼ cup kalamata olives
  • ⅓ cup feta cheese (optional)
  • Tzatziki sauce (Greek yogurt, cucumber, garlic, lemon juice)

Instructions

  1. Marinate the steak by mixing olive oil, garlic, lemon juice, oregano, thyme, salt, and pepper. Coat the steak and let it marinate for 30 minutes to 4 hours.
  2. Prepare the tzatziki sauce by mixing Greek yogurt, grated cucumber, garlic, dill, lemon juice, salt, and pepper in a bowl.
  3. Heat a skillet over medium-high heat and sear the marinated steak for 4–5 minutes on each side until cooked to your liking. Let rest before slicing thinly.
