  • 1 cup packed brown sugar
  • 1/2 cup evaporated milk
  • 1 cup granulated sugar
  • 4 tbsp unsalted butter, cubed
  • 1 1/2 cups toasted and coarsely chopped pecans
  • 4 tbsp unsalted butter, additional, cubed
  • 1/4 cup boiling water

Instructions

  1. Line a baking sheet with aluminum foil or a silicone mat and spray with nonstick cooking spray.
  2. In a medium saucepan over medium heat, combine white sugar, brown sugar, and evaporated milk. Stir until the sugars dissolve completely.
  3. Insert a candy thermometer and cook the mixture while stirring occasionally until it reaches 240°F (soft ball stage).
  4. Remove from heat and drop cubes of unsalted butter on top without stirring. Let it sit for 1 minute.
  5. Add toasted pecans to the mixture and stir continuously until it thickens and lightens in color.
  6. Quickly drop spoonfuls onto the prepared baking sheet before it sets.
  7. If the mixture stiffens too quickly, add boiling water to loosen it up.
  8. Allow pralines to set at room temperature for approximately 30 minutes.
