  • 1/2 cup granulated sugar
  • 4 large eggs, separated
  • 1/4 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon cream of tartar (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and prepare an 8-inch round cake pan with parchment paper.
  2. In a mixing bowl, whisk together yogurt, vegetable oil, vanilla extract, egg yolks, and sugar until smooth.
  3. Sift flour, baking powder, and salt into a separate bowl, then gradually mix into the wet ingredients.
  4. In another bowl, beat egg whites with cream of tartar until soft peaks form; gradually add sugar while beating until stiff peaks form.
  5. Gently fold the egg whites into the batter in two additions to maintain fluffiness.
  6. Pour batter into the prepared pan and bake for 25-30 minutes or until golden brown and a toothpick comes out clean.
