  • 1/4 cup ricotta cheese
  • 1/2 cup mozzarella cheese
  • 1/4 cup Parmesan cheese
  • 1 tablespoon fresh thyme
  • 1 tablespoon olive oil (for drizzling)
  • 1 tablespoon honey
  • 1/2 teaspoon red pepper flakes (optional)

Instructions

  1. In a medium bowl, mix warm water, sugar, and yeast; let it sit until frothy (about 5 minutes).
  2. In a large bowl, combine flour and salt. Add the yeast mixture and olive oil; stir to form dough.
  3. Knead the dough on a floured surface for about 8-10 minutes until smooth.
  4. Place in an oiled bowl, cover, and let rise in a warm area until doubled (1 to 1.5 hours).
  5. Mix ricotta, mozzarella, Parmesan, lemon zest, and juice in a bowl for the topping.
  6. Preheat oven to 475°F (245°C) with pizza stone or baking sheet inside.
  7. Roll out dough into a thin round shape (12 inches). Transfer to parchment paper.
  8. Spread cheese mixture over dough; sprinkle with fresh thyme.
  9. Bake for 10-12 minutes until golden brown.
  10. Drizzle with olive oil and honey before serving.
