  • 1/2 cup creamy peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup creamy peanut butter for filling
  • 1/4 cup unsalted butter for filling, softened
  • 1 cup powdered sugar for filling
  • 1 teaspoon vanilla extract for filling
  • 1–2 tablespoons milk, as needed for texture

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together softened unsalted butter, creamy peanut butter, granulated sugar, and brown sugar until light and fluffy.
  3. Mix in one large egg and vanilla extract until well combined.
  4. In another bowl, whisk together all-purpose flour, baking soda, and salt. Gradually add to the wet mixture until a dough forms.
  5. Roll dough into oval shapes, press down with a fork to create a crosshatch pattern, and sprinkle with sugar.
  6. Bake for 8–10 minutes until lightly golden, then cool completely on a wire rack.
  7. For the filling, beat together additional creamy peanut butter and unsalted butter with powdered sugar until smooth; add milk gradually for desired texture.
  8. Spread or pipe the filling onto one cookie half and sandwich with another cookie.
