  • 3 skinless chicken breasts (cut into 1-inch chunks)
  • 1/2 cup chicken broth
  • 3 tablespoons orange marmalade
  • 1 cup soy sauce
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon garlic powder
  • 1 purple onion (cut into 1-inch pieces)
  • 1 red bell pepper (cut into 1-inch pieces)
  • 1/2 fresh pineapple (cut into 1-inch pieces)
  • Olive oil

Instructions

  1. In a gallon freezer bag, combine chicken with chicken broth, orange marmalade, soy sauce, ground ginger, and garlic powder. Seal the bag and marinate in the fridge for 2-4 hours.
  2. Preheat your grill to medium-high heat. Thread marinated chicken onto skewers, alternating with pieces of onion, bell pepper, and pineapple.
  3. Lightly brush the grill with olive oil before placing the skewers on it. Grill for about 8-10 minutes, turning occasionally until the chicken is cooked through and has nice grill marks.
  4. Serve immediately, garnished with fresh cilantro if desired.
