Hawaiian Chicken Kebabs are the ultimate summer treat, perfect for barbecues or casual family dinners. These skewers feature tender chicken marinated in a sweet and tangy sauce, paired with juicy pineapple and vibrant vegetables like bell peppers and onions.

  • 1 3/4 lb boneless, skinless chicken breast
  • 3 cups fresh cubed pineapple
  • 1 1/2 large green peppers
  • 1 large red onion
  • 1/3 cup ketchup
  • 1/3 cup packed dark brown sugar
  • 1/3 cup low-sodium soy sauce
  • 1/4 cup canned pineapple juice
  • 4 Tbsp olive oil (divided)
  • 1 1/2 Tbsp rice vinegar
  • 4 garlic cloves (minced)
  • 1 Tbsp minced ginger
  • 1/2 tsp sesame oil
  • Salt and freshly ground black pepper

Instructions

  1. In a mixing bowl, whisk together marinade ingredients: ketchup, brown sugar, soy sauce, pineapple juice, olive oil (2 Tbsp), rice vinegar, garlic, ginger, and sesame oil. Season with salt and pepper.
  2. Marinate chicken in a resealable bag with half the marinade for at least 1 hour.
  3. Preheat grill to medium heat (400°F). Toss vegetables (bell pepper and onion) with remaining olive oil and season.
  4. Thread marinated chicken and vegetables onto skewers.
  5. Grill kebabs for about 10 minutes total, basting with reserved marinade and turning halfway until chicken is cooked through (165°F internal temp).
