  • 1/2 cup (113 grams) cold salted butter, diced
  • 1/3 cup (80 grams) sour cream
  • 1 tablespoon high-heat oil
  • 2 pounds beef brisket or boneless chuck roast, cut into 1-inch pieces
  • 8 ounces button or baby bella mushrooms, cleaned and quartered
  • 4 medium to large carrots, peeled and sliced on the diagonal
  • 1 large onion, diced
  • 2 tablespoons all-purpose flour
  • 2 tablespoons tomato paste
  • 2 tablespoons fresh thyme leaves
  • 3 garlic cloves, minced
  • 1½ teaspoons (5 grams) coarse kosher salt
  • 1 teaspoon ground black pepper
  • 2 cups beef broth
  • 11 ounces beef broth
  • 1 tablespoon turbinado or brown sugar
  • Egg wash

Instructions

  1. For the crust, mix flour and cold butter until crumbly; add sour cream until a dough forms. Chill for 30 minutes.
  2. Brown seasoned beef in high-heat oil; remove from skillet.
  3. Sauté onions, mushrooms, and carrots in the same skillet; add garlic and thyme.
  4. Sprinkle flour over veggies; stir in tomato paste and both broths until thickened.
  5. Return beef to skillet; simmer with sugar for 30 minutes.
  6. Preheat oven to 375°F (190°C). Roll out dough, fill baking dish or ramekins, cover with dough, seal edges, and cut slits for steam.
  7. Brush with egg wash and bake for 30–35 minutes until golden brown.
