  • 2 medium zucchinis, sliced
  • 1 cup shredded mozzarella cheese
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes, drained
  • 1 tbsp olive oil
  • 1 tsp dried Italian herbs
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish with olive oil.
  2. In a skillet over medium heat, add olive oil and sauté chopped onion and minced garlic until fragrant.
  3. Add ground turkey and cook until browned, breaking it apart with a spoon.
  4. Stir in drained diced tomatoes, Italian herbs, salt, and pepper; simmer for about 4 minutes.
  5. Layer half of the zucchini slices in the baking dish followed by half of the turkey mixture and half of the mozzarella cheese. Repeat layers.
  6. Bake uncovered for 30-35 minutes until bubbly and golden on top. Let cool for 5 minutes before serving.
