  • 1.5 lbs salmon fillets, cut into 1-inch squares
  • 2 large lemons, thinly sliced
  • 2 Tbsp fresh parsley, chopped
  • 23 garlic cloves, pressed
  • ½ Tbsp Dijon mustard
  • ½ tsp salt
  • ⅛ tsp ground black pepper
  • 2 Tbsp light olive oil
  • 2 Tbsp fresh lemon juice

Instructions

  1. Soak bamboo skewers in water for at least one hour. Preheat your grill to medium heat (375°F).
  2. In a medium bowl, mix parsley, garlic, Dijon mustard, salt, pepper, olive oil, and lemon juice to create the marinade.
  3. Thread salmon pieces and folded lemon slices onto two skewers at a time. Brush both sides with marinade.
  4. Oil the grill grates and place skewers on the hot BBQ. Grill for about 3-4 minutes per side until salmon is opaque.
