  • 4 pounds boneless skinless chicken thighs
  • 1 cup unsweetened pineapple juice
  • ½ cup soy sauce
  • ½ cup brown sugar
  • ⅓ cup ketchup
  • ¼ cup chicken broth
  • 2 teaspoons freshly grated ginger
  • 1 ½ teaspoons minced garlic

Instructions

  1. In a medium bowl, whisk together the pineapple juice, soy sauce, brown sugar, ketchup, chicken broth, ginger, and garlic to create the marinade.
  2. Reserve 1 cup of the marinade for basting and pour the remaining marinade over the chicken thighs in a ziplock bag. Seal tightly and marinate in the refrigerator for at least 3 hours or overnight.
  3. Preheat your grill to medium heat. Grill the chicken for about 6–8 minutes per side until cooked through and internal temperature reaches 165°F. Baste occasionally with reserved marinade during the last few minutes of cooking.
