  • 8 cups reduced sodium chicken broth
  • 4 boneless, skinless chicken thighs
  • 1/4 cup light soy sauce
  • 1/4 cup mirin
  • 2-inch piece fresh ginger, chopped
  • 35 cloves garlic, chopped
  • 8 oz fresh shiitake mushrooms
  • 5 oz baby spinach
  • 12 oz ramen noodles

Instructions

  1. In a large pot, combine chicken broth, light soy sauce, mirin, ginger, garlic, and green onions. Bring to a boil and then reduce to simmer for 15-20 minutes.
  2. While the broth simmers, heat vegetable oil in a skillet over medium-high heat. Season chicken thighs with black pepper and cook for about 4-5 minutes on each side until golden brown.
  3. Mix remaining glaze ingredients (light soy sauce, dark soy sauce, brown sugar, minced ginger, minced garlic) in a bowl and pour over the chicken in the skillet. Cook until thickened, about 5 minutes.
  4. Remove the chicken from the skillet and slice thinly after resting.
  5. Strain the broth into another pot to remove solids. Add shiitake mushrooms and cook for an additional 5 minutes before adding baby spinach and sesame oil until wilted.
  6. Prepare ramen noodles according to package instructions but cook them one minute less than directed.
  7. Serve by placing noodles in bowls topped with broth, vegetables, sliced chicken, and garnish as desired.
