  • 2 zucchini (medium, sliced)
  • 1.5 cups corn kernels (cooked; about 3 corn ears – corn on the cob)
  • 2 tablespoons freshly squeezed lime juice (or more)
  • 4 tablespoons butter (divided)
  • 1/2 cup fresh cilantro (chopped)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add sliced chicken breasts; season with smoked paprika, salt, and pepper. Cook until golden brown on both sides (5-7 minutes). Remove and set aside.
  3. In the same skillet, sauté sliced zucchini for 3-4 minutes until tender; add corn kernels.
