  • 1 pound boneless skinless chicken breasts
  • 2 tablespoons canola oil
  • Zest and juice of 1 large lime
  • 1 tablespoon chili powder
  • 1 ½ teaspoons ground cumin
  • 1 clove garlic, chopped
  • 1 jalapeño, chopped (seeds removed if desired)
  • ½ teaspoon kosher salt
  • 1 large red bell pepper
  • 1 large green bell pepper
  • 1 large red onion
  • Fresh cilantro (for serving)

Instructions

  1. Cut chicken into bite-sized pieces and place in a zip-top bag.
  2. In a bowl, whisk together canola oil, lime juice and zest, chili powder, cumin, garlic, jalapeño, and salt. Pour over chicken in the bag; seal and coat evenly.
  3. Refrigerate for at least 30 minutes (or overnight) to marinate.
  4. Preheat grill to medium-high heat; soak wooden skewers in water if using.
  5. Cut bell peppers and onion into chunks; thread onto skewers alternately with marinated chicken pieces.
  6. Lightly oil the grill surface and cook kebabs for about 6 to 8 minutes until chicken is cooked through, turning occasionally.
  7. Serve warm with fresh cilantro and lime wedges.
