  • 1 medium spaghetti squash
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 4 cups fresh spinach
  • 1/2 cup cream cheese, softened
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cut spaghetti squash in half lengthwise and scoop out seeds. Drizzle with olive oil and season with salt and pepper.
  3. Place cut-side down on a baking sheet and roast for 30-35 minutes until tender.
  4. In a skillet, heat olive oil over medium heat. Sauté onion until translucent, then add garlic and mushrooms; cook until browned.
  5. Stir in spinach until wilted, then remove from heat.
  6. In a mixing bowl, combine cream cheese, Parmesan cheese, nutmeg, and the sautéed mixture. Mix well and season to taste.
  7. After roasting squash, scrape strands into the filling mixture.
  8. Spoon back into squash halves, top with mozzarella cheese, and bake for another 10-15 minutes until bubbly.
