  • 2 pounds zucchini (cut into 1/4-inch slices)
  • 2 tablespoons butter
  • 3 cloves garlic (minced)
  • ½ cup heavy cream
  • ½ cup sour cream
  • 1 cup grated parmesan cheese (divided)
  • 1 cup shredded mozzarella cheese (divided)
  • 1 teaspoon Italian seasoning
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • ½ teaspoon fresh ground black pepper

Instructions

  1. Preheat the oven to 425°F.
  2. Generously butter a baking dish and set aside.
  3. Sprinkle salt on zucchini slices and let rest for 15 minutes to draw out moisture, then wipe off excess salt.
  4. In a mixing bowl, whisk together heavy cream, sour cream, Italian seasoning, onion powder, salt, pepper, and half the parmesan cheese.
  5. Melt butter in a saucepan over medium heat; add garlic and sauté briefly.
  6. Combine the cream mixture with melted butter in the saucepan; whisk until slightly bubbling.
  7. Stir in half the mozzarella cheese until melted.
  8. Pour the creamy sauce over zucchini slices; evenly distribute.
  9. Top with remaining cheeses and bake for 18-22 minutes until golden brown.
  10. Let cool for 5-10 minutes before serving.
