  • ½ pound Penne pasta
  • 1 pound Boneless skinless chicken breast
  • ½ cup Basil pesto
  • 1 cup Half and half
  • 1 cup Chicken broth
  • ½ cup Freshly grated Parmesan cheese
  • 1 cup Freshly shredded Mozzarella cheese
  • 1 tablespoon Olive oil
  • 2 Garlic cloves (minced)
  • 1 teaspoon Italian seasoning
  • Salt and pepper (to taste)
  • 2 tablespoons Butter
  • 3 tablespoons All-purpose flour

Instructions

  1. Boil the Penne pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic, Italian seasoning, and diced chicken breast. Season with salt and pepper, cooking until the chicken is no longer pink.
  3. Remove the chicken from the skillet. Melt butter in the same skillet, whisk in flour, then gradually add chicken broth and half & half until thickened.
  4. Stir in pesto, Parmesan, and Mozzarella until smooth. Add cooked pasta and chicken; mix well to coat.
  5. Garnish with fresh basil before serving.
