  • 1 tbsp unsalted butter
  • 4 skinless salmon fillets
  • ¼ tsp salt
  • 1 tsp garlic powder
  • 1 tbsp Cajun seasoning
  • 4 garlic cloves (minced)
  • 1 yellow onion (finely chopped)
  • ½ tsp salt
  • 1 tsp black pepper
  • 3 sprigs of thyme (more for serving)
  • 1 cup orzo
  • 3 ears corn
  • 2 ½ cups chicken broth
  • 1 cup grated Parmesan
  • 1 tbsp lemon juice
  • 1 cup heavy cream
  • Chili flakes for serving (optional)

Instructions

  1. Pat dry salmon fillets and season with salt, garlic powder, and Cajun seasoning.
  2. Shuck corn and cut kernels off the cob.
  3. In a nonstick skillet, heat oil and butter; sear the salmon for 3-4 minutes per side. Remove and set aside.
  4. Cook minced garlic and chopped onion in the same skillet until fragrant.
  5. Add orzo and corn; toast for 1 minute.
  6. Pour in chicken broth; simmer until orzo is nearly al dente (about 10 minutes).
  7. Stir in Parmesan cheese, heavy cream, and lemon juice until combined; return salmon to the skillet.
  8. Heat through for another few minutes, then serve garnished with fresh thyme.
