  • 1 can (15 oz) unsweetened full-fat coconut milk
  • ¾ cup water
  • 2 teaspoons sugar
  • ¼ teaspoon salt

Instructions

  1. Rinse jasmine rice in a sieve until the water runs clear to remove excess starch.
  2. In a pot over medium heat, combine rinsed rice, coconut milk, water, sugar, and salt. Stir gently.
  3. Bring to a boil, then reduce heat to low. Cover and simmer for 18 minutes without lifting the lid.
  4. After 18 minutes, check if all liquid has absorbed; if not, cook for an additional 4 minutes.
  5. Remove from heat and let it sit covered for 10 minutes before fluffing with a fork.
