  • 3 tablespoons olive oil
  • 4 cloves garlic (minced)
  • 4 tablespoons cilantro (finely chopped)

  • 1 teaspoon red chili flakes
  • Salt to taste
  • Lime wedges and chopped cilantro for garnishing

Instructions

  1. Preheat your oven to 375°F (190°C). In a large bowl, whisk together olive oil, minced garlic, chopped cilantro, lime juice, red chili flakes, and salt.
  2. Add the chicken thighs to the marinade and coat evenly. Allow them to marinate for at least 15 minutes (up to 2 hours for optimal flavor).
  3. Heat a skillet over medium heat and pan-fry the chicken skin-side down until browned (about 5 minutes). Flip and brown the other side.
  4. Spoon remaining marinade over the chicken in the skillet and transfer it to the oven. Bake for about 20 minutes until fully cooked through.
  5. Serve on a platter with garnishes of lime wedges and chopped cilantro.
