  • 1 lb boneless chicken thighs, cut into bite-sized pieces
  • 1 medium zucchini, sliced
  • 3 cloves garlic, smashed
  • 1/4 cup light soy sauce
  • 1 tablespoon cooking oil
  • 1 tablespoon oyster sauce
  • Optional: sesame oil, sugar (or honey), ground black pepper

Instructions

  1. 1. Marinate chicken: In a bowl, combine cornstarch, soy sauce, sesame oil, sugar (or honey), and add chicken. Let it marinate for at least 30 minutes.
  2. 2. Heat oil: In a large wok or frying pan over medium-high heat, add cooking oil.
  3. 3. Cook chicken: Add smashed garlic and marinated chicken to the pan. Stir fry until the chicken is no longer translucent (about 2 minutes). Remove from pan and set aside.
  4. 4. Stir fry zucchini: In the same pan, add zucchini and stir fry for about 5 minutes until tender.
  5. 5. Combine: Return chicken to the pan with zucchini; add oyster sauce and mix well. Cook together for another 2-3 minutes.
