  • 9 tbsp salted butter
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 tbsp heavy cream
  • 1 1/2 tsp vanilla extract
  • 1 1/4 cup all-purpose flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 3 cups kataifi (shredded phyllo dough)
  • 1 cup pistachio cream/butter
  • 2 cups heavy cream
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F. Grease an 8×8” baking pan and line it with parchment paper.
  2. In a saucepan, melt the salted butter over medium heat until browned. Let cool slightly.
  3. Mix flour, baking soda, baking powder, and salt in a separate bowl.
  4. Combine sugars with cooled butter, then add the egg, cream, and vanilla. Mix well.
  5. Fold in dry ingredients until just combined and add chocolate chips.
  6. Spread the batter into the prepared pan and bake for 22-27 minutes until lightly golden.
  7. Prepare the pistachio filling by toasting kataifi in melted butter, then mix with pistachio cream.
  8. Make ganache by heating heavy cream and pouring it over chocolate chips; stir until smooth.
  9. Layer pistachio filling on top of baked cookie base, pour ganache over it, and garnish with chopped pistachios.
  10. Chill for at least an hour before cutting into squares.
