  • 2 large baking potatoes
  • 200g feta cheese
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 head of garlic
  • 1 lemon, quartered
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 200C (390F).
  2. Wash and cube the baking potatoes, then par-boil them in salted water for 6-8 minutes. Drain and let them steam dry.
  3. Toss the par-boiled potatoes with olive oil, thyme, oregano, salt, and pepper in a baking dish.
  4. Roast for 30-40 minutes until golden brown.
  5. Add the block of feta cheese and squeeze half a lemon over it; roast for an additional 15 minutes.
  6. Squeeze out roasted garlic cloves into the dish, mix gently and finish with honey and fresh basil before serving.
