  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon fine salt
  • ½ cup (113 g) unsalted butter, at room temperature
  • ½ cup (100 g) granulated sugar
  • ½ cup (100 g) packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 medium apple, peeled and finely chopped
  • ¼ cup (50 g) granulated sugar (for rolling)
  • 1 teaspoon ground cinnamon (for rolling)

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, cream of tartar, cinnamon, and salt; set aside.
  3. In a large bowl, beat butter, granulated sugar, and brown sugar until light and fluffy. Add egg and vanilla; mix until combined.
  4. Gradually add dry ingredients to wet mixture until just combined. Fold in chopped apple.
  5. In a small bowl, combine additional sugar and cinnamon for rolling.
  6. Roll tablespoon-sized dough into balls and coat in cinnamon sugar mixture. Place on prepared baking sheet.
  7. Bake for 8–10 minutes until edges are golden but centers are soft. Cool before serving.
