Ingredients

Scale
  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 3/4 cups buttermilk
  • 2 large eggs, lightly beaten
  • 4 tablespoons unsalted butter, melted and cooled
  • 1 teaspoon vanilla extract
  • 2 medium apples, peeled, cored, and diced
  • Vegetable oil, for greasing the waffle iron
  • 2 cups powdered sugar
  • 1/4 cup milk (or more, as needed)
  • 1 teaspoon vanilla extract for glaze
  • 1/4 teaspoon ground cinnamon (optional)
  • Chopped nuts (pecans or walnuts)
  • Sprinkles
  • Caramel sauce

Instructions

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined.
  2. In another bowl, whisk together the buttermilk, eggs, melted butter, and vanilla extract until smooth.
  3. Gradually pour the wet mixture into the dry ingredients. Whisk gently until just combined; it's okay if there are a few lumps in the batter.
  4. Gently fold in the diced apples using a spatula to ensure they are evenly distributed throughout the batter.
  5. Allow the batter to rest for 10-15 minutes. This helps improve the texture of your donuts.
  6. Preheat your waffle iron according to the manufacturer's instructions so it’s ready when you are!
  7. Lightly grease the waffle iron with vegetable oil to prevent sticking.
  8. Pour about 1/2 to 3/4 cup of batter onto the hot waffle iron depending on its size.
  9. Close the waffle iron and cook for about 3-5 minutes or until golden brown.
  10. Carefully remove each cooked waffle donut from the iron using tongs or a fork. Place them on a wire rack to cool slightly.
  11. Repeat steps 7-10 with remaining batter until all waffles are cooked.
  12. In a medium bowl, whisk together powdered sugar, milk, vanilla extract, and cinnamon (if using).
  13. Add more milk one tablespoon at a time until you reach your desired glaze consistency—smooth but not too runny.
  14. Dip each cooled waffle donut into the glaze for an even coating.
  15. Sprinkle with chopped nuts or sprinkles. Drizzle with caramel sauce if desired.
  16. Allow glazed waffles to sit on a wire rack so that the glaze can set slightly before serving.
  17. Serve your delightful apple fritter waffle donuts warm or at room temperature for everyone to enjoy!
