- 1 egg
- 1/2 yellow onion, diced
- 1/2 Granny Smith apple, peeled and diced
- 2 large sweet potatoes
- 1 tb olive oil
- 2 oz cheddar cheese, freshly grated
- 1/2 c fine breadcrumbs
- 1/4 cup parsley, chopped
- 1/4 cup walnuts, finely diced
- 1 1-inch piece of ginger, grated
- 1 tb maple syrup
- 1/2 tsp each: cinnamon, coriander, cumin, and nutmeg
- Salt and cayenne to taste
- Preheat oven to 400°F.
- Bake sweet potatoes on a baking sheet for 60–75 minutes until tender.
- Sauté diced onion and apple in olive oil over medium heat for 5–7 minutes until softened.
- In a bowl, combine ground chicken, egg, breadcrumbs, cheddar cheese, parsley, walnuts, ginger, sautéed onion/apple mixture, salt, pepper, and cayenne. Mix gently.
- Form into 2-inch meatballs and place on a greased baking sheet; bake for 15 minutes.
- Once sweet potatoes are cooked, mash them with butter, maple syrup, spices, salt, and cayenne until smooth.
